Roasted Grape Tomatoes
- 2 pints grape tomatoes
- 12 sprigs fresh thyme
- 4 tbsp extra-virgin olive oil
- Coarse salt
- Freshly ground black pepper
- Preheat oven to 425 degrees.
- Assemble grape tomatoes on a baking sheet and cover with olive oil, thyme, salt, and pepper. Bake until caramelized, about 20 minutes.
- Serve with goat cheese and crackers.
