- 1 egg
- 1 teaspoon prepared Dijon mustard
- Pinch salt
- 1/4 teaspoon sugar
- 1 cup vegetable or safflower oil
- 1 tablespoon fresh lemon juice
- Pinch ground black pepper
- In a blender, mix egg, mustard, salt, and sugar. Slowly drizzle in oil while blender is running. Add lemon juice. Season with black pepper. Refrigerate in a jar.
