- 1 (2-inch) piece ginger, peeled
- 1 small red onion, coarsely chopped
- 1 large red mild dried chile, such as New Mexico
- 2 cloves garlic
- Juice of 1 lime
- 3 tablespoons white vinegar
- 2 teaspoons madras curry powder
- 1 teaspoon fine sea salt
- Place all ingredients in the jar of a blender; add 1/4 cup water. Blend until coarsely ground.
