This sesame seed-based sauce from Michael's Genuine Food & Drink chef Michael Schwartz is a refreshing accompaniment to his Falafel.

Yield Makes 1 cup
1/2 cup tahini (sesame seed paste)
1 tablespoon soy sauce
Juice of 1 lemon
2 cloves garlic, minced
Pinch of coarse salt
Place all ingredients in the jar of a blender along with 1/2 cup water. Blend on high until smooth and creamy. If sauce gets too thick as it sits, stir in a little more water or lemon juice to thin out.
