Sauteed Spinach
Use to make Easter Waffles Florentine.

Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 pounds spinach leaves
- Coarse salt and freshly ground pepper
Directions
- Heat oil in a large skillet over medium heat. Add spinach and cook, stirring, until wilted, 2 to 3 minutes. Season with salt and pepper.
