Fava Beans Over Chicken

- 1 sliced leek
- 1 cup blanched, peeled fava beans
- 1/4 cup chicken stock
- 2 tablespoons heavy cream
- Lemon juice
- Salt and pepper
- Poached chicken
- Saute leek in butter. Add fava beans and chicken stock. Simmer for 1 minute. Stir in heavy cream. Simmer for 2 minutes. Season with lemon juice, salt, and pepper. Serve on chicken.
