Grated Tomato Dressing
Tomato gives this mix a thick texture and a marinara-esque undertone. Mix it into any veggie-packed salad for added flavor.

- 1 grated tomato
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon red-wine vinegar
- 1/2 teaspoon finely chopped fresh oregano
- 1/2 teaspoon coarse salt
- 1/4 teaspoon freshly ground pepper
- 1/4 teaspoon sugar
- Shake together tomato, olive oil, vinegar, oregano, salt, pepper, and sugar.
