Yield Makes enough for one 10-inch round cake
- 3 large egg whites
- 1 1/2 cups confectioners' sugar
- Zest of 1 lemon
- Place all ingredients in the bowl of an electric mixer fitted with the whisk attachment. Beat until stiff peaks form.
