Yield Makes 1 1/2 cups
- 8 ounces bittersweet chocolate, chopped
- 1 cup heavy cream
- Prepare an ice-water bath. Place chocolate in a small heatproof bowl. Bring cream to a simmer in a small saucepan over medium-high heat. Pour over chocolate, and whisk until smooth. Set bowl in ice-water bath, and let stand, stirring, until thickened but spreadable and the consistency of frosting. Use immediately.
