Summer Iced Tea How-To
Hang the tea bags into an 8-cup Pyrex container; if you're using loose bags, gather them in cheesecloth, tie together, and put them in the bottom of the container. Pour boiling water over the tea, and steep for at least 10 minutes. Add 1/4 cup sugar, taste, and add more sugar if desired. Squeeze the juice of one lemon into tea mixture; add more as desired.
Don't pour this tea into a pitcher with ice, which will dilute the flavor; instead, fill glasses with ice when you're ready to serve the tea. Transfer the tea to a pretty pitcher, garnish with thin slices of lemon, and serve. Add a sprig of mint to each glass of tea.
