Yorkshire Pudding
![]() A roast beef in Britain isn't quite complete unless it's served with a golden-brown Yorkshire pudding. Something of a cross between a popover and a souffle (and not at all like any of the usual assorted foods that Americans and Britons call pudding), Yorkshire pudding is made from a basic batter of eggs, milk, and flour. This recipe is brought to us by chef Anne Willan, who recommends using pan drippings from the roast beef to impart an added flavor to this airy accompaniment. IngredientsServes 12
