Red Cabbage and Onion Tarts

Pineapple in Brown Sugar with Ice Cream

1. Assemble all ingredients and utensils.
2. Make pastry; chill.
3. Prepare tart filling; while it cooks, prepare pineapple.
4. Prepare leeks; cook. Add stock and potatoes; simmer.
5. While soup cooks, assemble tarts. Chill, then bake.
6. While tarts bake, puree soup; simmer.
7. Assemble salad.
8. Add greens to soup.
9. Cook pineapple; serve with ice cream.
