Poached salmon fillets are topped with spicy beet relish and served with French-cut green beans tossed in a garlicky tapenade dressing.

Individual Apricot Tarts

1. Prepare and chill pate brisee for the apricot tarts.
2. Roast the beets, and boil the potatoes.
3. Poach the salmon, and cook the green beans.
4. Bake the apricot tarts.
5. Make the mint mayonnaise and beet relish, and serve.
