The delicate flavor of veal is infused with a marinade of olive oil, lime juice, and herbs. In keeping with Italian tradition, the chopped salad is served on top; ours uses baby cherry tomatoes, endive, cucumber, pepper, and mint.

Serves 4

Tarragon Marinated Mushrooms

Chopped Summer Salad

Apricot and Berry Tart

1. Prepare tarragon marinade, and let mushrooms soak.
2. Bake crust for tart.
3. Marinate veal chops, and finish baking tart.
4. Chop and toss summer salad.
5. Grill veal chops, and serve salad on top.
