Old-style pubs have it right: Sitting down to a generous helping of shepherd's pie is a true pleasure; making it is happily simple.

1. Up to 1 week ahead, make dressing and croutons for spinach salad; refrigerate dressing, and store croutons in a resealable plastic bag.
2. 1 day ahead, make beef filling and cheddar-potato topping for shepherd’s pie; refrigerate separately. Toast pecans for dessert; store in a resealable plastic bag.
3. 1 1/2 hours ahead, prep apples; bake. Assemble shepherd’s pie. While apples cool, bake shepherd’s pie.
4. Just before serving, toss mushrooms with dressing; add remaining ingredients, and toss.
