1. Up to 2 weeks ahead, buy or order German beers and waffle cookies.
2. Early in the day, make pretzels. Chill beers and steins if desired. Cook and dress potatoes, except for herbs.
3. 1 hour ahead, set table. Cook sausages and sauerkraut, and keep warm
4. 30 minutes ahead, prepare plums, but do not roast them.
5. Just before party, rewarm pretzels in an oven set at 250 degrees. Put out mustards and beers. Warm potatoes over low heat, and toss with herbs. Roast plums before sitting down to dinner.
