More than a cradle for ice cream scoops, waffle cones are the secret behind another iced confection: a tree-shaped cake laden with snowy frosting. To make the trees, bake the batter inside waffle cones, lining the cones with parchment paper and standing them in holes cut into a disposable foil roasting pan. When the cakes are ready, remove and discard the cones and parchment. Then invert each tree cake onto a mini cupcake, and cover it with cream cheese frosting using a pastry bag and a star tip. Sprinkle with sanding sugar, and use a little extra to create beds of "snow" for serving.
