Use these cooking techniques and follow our tips to cut calories and fat without sacrificing flavor.

1. Light Tip: Steam with Flavor
Instead of water, steam with flavorful ingredients (such as vegetables and wine) that create moist heat and end up on your plate.

2. Light Tip: Less Yolk, More White
Rather than eliminating yolks altogether, just use fewer. You're still reducing fat, and you will avoid the rubbery texture obtained by using only egg whites.

3. Light Tip: Bake, Don't Fry
There's no need to fry in a lot of oil to get a crispy breadcrumb crust. Before baking, moisten the crumbs with a little oil; coat pork, chicken, or fish. Bake until golden, and the crust will be just as crispy.

4. Light Tip: To Use Less Oil, Broil
This is another way to cook with less oil. A broiler heats from the top, so you need very little oil to prevent food from sticking to the cooking surface.
