These staples of Mexican cooking are not only versatile and low-fat, they are fun to eat.

How to Use Them
Traditionally used for making burritos, tostadas, and quesadillas, tortillas can also be served in place of bread at dinner or as a sandwich wrap: Fold over scrambled eggs for breakfast, for example, or tuna salad for lunch.

Large or Small?
Small tortillas are best for making tostadas and quesadillas; use large ones for burritos and fajitas.

How to Store Them
Tortillas will keep in the refrigerator, in a sealed plastic bag, for up to two months.

How to Heat Them
Tortillas are precooked, but they taste best when warmed. Set a single tortilla in a dry skillet over medium-high heat, 10 seconds, turning once. Or place tortilla between damp paper towels; heat in microwave 30 seconds.
