Roasted Salmon with Lemon-Herb Vinaigrette
For a super-quick after-work meal, use smaller pieces of fish. Preheat oven to 450 degrees. Season 4 salmon fillets (6 to 8 ounces each) with salt and pepper. Roast on a parchment-lined baking sheet until fish flakes easily, 8 to 10 minutes. Meanwhile, in a blender, combine 1/3 cup extra-virgin olive oil, 1/4
cup fresh lemon juice, 1/4 cup fresh herbs, and 2 tablespoons Dijon mustard. Blend until smooth; season with salt and pepper. Drizzle vinaigrette over salmon. Serves 4.
