This drink is based on nimbu pani, a lemon- or limeade popular in India. A little orange-blossom water, while not necessary, gives it a delicate fragrance.

- 1/4 cup fresh lime juice (from 2 to 3 limes)
- 12 ounces gin, chilled
- 3/4 teaspoon orange-blossom water (kalustyans.com; optional)
- 3/4 cup Simple Syrup
- 1/4 teaspoon fine salt, preferably sea salt
- 24 ounces seltzer water, chilled
- Ice, for serving
- Lime rounds, for garnish
Stir together lime juice, gin, orange-blossom water, simple syrup, and salt in a pitcher until thoroughly combined. Slowly add seltzer and gently stir until combined. Fill 6 glasses with ice. Divide cocktail among glasses and garnish with lime rounds. Serve immediately.
