I agree with tcampos -- this recipe is way too simple for something called "Grasshopper Sundae." It should be called "Mint Chip Ice Cream with Chocolate Sauce" and add chocolate cookies if you'd like. Unless there is something else happening here that I don't understand, I don't know why this is even considered to be a recipe.
If you can't figure out how to "position" cookies, just crush them, and layer them, or, you could place them on the saucer or serving plate you're serving the ice cream on - It's a playful desert....If you want to get really technical, should I heat up the chocolate sauce....If it's for adults could'nt I maybe drizzle some creme de minthe, over it use your imagination!
Ridiculous! Position them any way you want, for heavens sake!!
