Crystallized Ginger and Orange Zest Matzo

- 5 ounces chopped dark chocolate
- 2 sheets matzo
- 2 tablespoons finely chopped crystallized ginger
- Thin strips of orange zest
Melt chocolate in a bowl set over a pan of simmering water. Spread evenly over matzo using a small offset spatula. Sprinkle with ginger and orange zest. Let set.
