Salad Potato

Ingredients

  • Prosciutto
  • Dijon mustard
  • Lemon juice
  • Olive oil
  • Baby arugula
  • 4 baked potatoes
  • Shaved Parmesan

Directions

  1. Step 1

    In a skillet, cook prosciutto until crisp. Make a dressing with mustard, lemon juice, and olive oil; season and toss with arugula. Top potatoes with salad, prosciutto, and Parmesan.
