Jodi Levine's Royal Icing

  • Yield: Makes about 1 1/4 cups


  • 2 cups Truvia Baking Blend
  • 2 teaspoons cornstarch
  • 1 tablespoon meringue powder
  • 2 tablespoons water


  1. In a food processor, combine Truvia Baking Blend and cornstarch. Process on high speed until mixture resembles the consistency of confectioners' sugar. Remove from processor; set aside.

  2. Using a hand mixer with the whisk attachment, mix together meringue powder with water until soft peaks form, about 1 minute. Using the beater attachments, add 1 cup plus 2 tablespoons Truvia mixture; continue mixing until well combined, scraping down sides of the bowl as necessary. Reserve remaining Truvia mixture for another use.
