Cauliflower-and-Apple Salad

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons cider vinegar
  • Salt and pepper
  • 1 small head cauliflower
  • 2 thinly sliced Gala apples
  • 3/4 cup torn fresh mint leaves


  1. In a large bowl, whisk together oil and vinegar; season with salt and pepper. With a mandoline or sharp knife, shave cauliflower into thin slices. Add to dressing along with apples and mint leaves, then toss.

This salad is good with roast chicken, meatloaf, pork tenderloin
