Lobster, Shrimp, Avocado, and a Tequila Dressing

Emeril Lagasse adds shrimp to a boil then makes a tequila dressing with an egg yolk, garlic, cilantro, and lime juice. He then takes serves lobster meat, shrimp and greens in a cocktail glass with the tequila dressing and avocado.
