Crisp Candy-Corn Treats

Two Halloween must-haves -- candy corn and cereal treats -- make one festive sweet. The trick? Spike the orange and yellow layers with citrus zest to add bright, unexpected flavor.

Ingredients

  • Cooking spray
  • 9 tablespoons unsalted butter, divided
  • 12 cups miniature marshmallows, divided
  • 3/4 teaspoon fine salt, divided
  • 9 cups crisp puffed-rice cereal, divided
  • 1 tablespoon grated orange zest
  • Yellow and red food coloring
  • 1 tablespoon grated lemon zest

Cook's Note

To store, arrange treats in a single layer on parchment-lined baking sheets, wrap tightly in plastic, and keep at room temperature, up to 3 days.

Directions

  1. Step 1

    Lightly coat a 5-by-9-inch loaf pan with cooking spray. In a large saucepan, melt 3 tablespoons unsalted butter over medium. Add 4 cups miniature marshmallows and 1/4 teaspoon fine salt; stir until melted. Stir in 3 cups crisp puffed-rice cereal and immediately transfer to pan. Coat an offset spatula with cooking spray and firmly press mixture into an even layer.

  2. Step 2

    Rinse saucepan. Repeat step 1 twice: To second batch, add orange zest and enough yellow and red food coloring to tint marshmallow mixture orange before adding cereal, then press into pan. To third batch, add lemon zest and enough yellow food coloring to tint marshmallow mixture yellow. Press third batch into pan.

  3. Step 3

    Let set 2 hours (or overnight). Run a small knife around edges of pan and invert loaf onto a cutting board. With a serrated knife, cut loaf into 10 slices. Cut each slice in half crosswise.

  4. Step 4

    Using your hands, gently mold each treat into a candy-corn shape.

    Great recipe! Followed recipe exactly as written. Both adults and children loved them. The orange and lemon zest added an extra special taste. Make the orange and yellow marshmellow mixture a little brighter color than you want the final treat because when you add the cereal it mutes the color somewhat. This will be a fall tradition for our family.

    I made these tonight and they turned out great. I have shaped them and individually wrapped each one. The zest was a nice surprise!

    If they are difficult to shape and not glossy, more marshmallow is needed! I did not follow the recipe exactly since I had a smaller loaf pan, so I can't say how much marshmallow to use. The white layer should have extra marshmallow to make it softer and easier to shape. This recipe does require a lot of food coloring. But, mine came out perfectly, pretty as the video, despite having the wrong size pan and making up the proportions.

    Eh, these didn't turn out as great as we had hoped. I think this picture must have been photoshopped, because our treats didn't turn out nearly as colorful as glossy! We followed the directions to the letter, but when it was time to cut our treats, they were rock hard, difficult to cut and shape, and each one has a dusty appearance. My husband came home and asked what they were supposed to look like - tombstones? Probably wouldn't bother with this recipe again.
