Blackberry-Cantaloupe Salad

For the sweetest flavor, enjoy this fruit salad at room temperature.

Ingredients

  • 2 cups blackberries
  • 1/2 cantaloupe, cut into 1-inch pieces
  • 1 tablespoon sugar
  • 1 teaspoon grated peeled fresh ginger
  • 1/2 teaspoon grated lime zest plus 1 tablespoon juice
  • 2 tablespoons thinly sliced fresh mint leaves

Directions

  1. In a large bowl, combine all ingredients except mint. Cover and let stand 30 minutes (or refrigerate, up to 2 days). Stir in mint just before serving.

    I have eaten cantaloupe since childhood with icecream and milk or just sugar. The recipe Sarah gave was to cut down on calories. Sinfully fresh, made me feel I am right in the middle of scorching summer having something so fresh, light and juicy! Awesome tastes lingering with a touch of ginger, lemon and a hint of mint! I absolutely loved my end of summer treat :) Thanks Sarah! :)
