Apricot-Blueberry Cobbler


You can bake and serve this homey dessert just as your grandmother would have -- in a cast-iron skillet -- or make it in a 2-quart baking dish.

  • 1 tablespoon cornstarch
  • 1/2 cup plus 2 tablespoons granulated sugar, divided
  • 12 apricots, cut into 1/2-inch wedges
  • 1 1/4 cups blueberries
  • 1 1/2 cups all-purpose flour (spooned and leveled)
  • 2 teaspoons baking powder
  • 1/4 teaspoon coarse salt
  • 1 stick cold unsalted butter, cut into small pieces
  • 3/4 cup cold heavy cream, plus more for brushing
  • Sanding sugar (optional)


  1. Preheat oven to 375 degrees, with racks in middle and lower thirds. In a large bowl, whisk together cornstarch and 1/2 cup granulated sugar. Stir in apricots and blueberries. Spread mixture into a 10-inch cast-iron skillet.

  2. In a food processor, pulse remaining 2 tablespoons granulated sugar, flour, baking powder, and salt until combined. Add butter and pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. Add heavy cream and pulse 2 or 3 times until combined.

  3. Spoon batter in 8 mounds on fruit mixture. Press lightly on tops to flatten, brush with heavy cream, and sprinkle with sanding sugar if desired.

  4. Bake on middle rack, with a foil-lined rimmed baking sheet on lower rack to catch drips, until biscuits are golden and juices bubble in center, 45 minutes to an hour. Transfer to a wire rack and let cool. Serve warm or at room temperature.

    This recipe was delicious! For those who have complaints about the printer function, email customer service! Comments here that have nothing to do with the recipe are frustrating to come across and most likely do nothing to help your issue.

    Hi....I just wanted to say that I've read some of the users not knowing how to print the recipe and you just have to use the side arrow to go up or down....and when you are at the top, take the arrow go down a little and a little brown tool bar will appear! On the upper right hand side of the toolbar where you see "f, P, and an envelop", next to it is what you click on to get to the printable page! I hope I helped! Lesa

    I too do not like the new format. Very difficult to manage and I can't print at all. I end up copying and pasting into Word which is cumbersome. Love the recipes and love Sarah but not the new format. Please change it back!!

    I agree with the others--the format of the site has changed. The recipe is no longer in an easy to read/follow format, half the time I can't save it, and I can't find a print icon either. I love to watch the recipe video first, then keep the recipe if it is one I love. Sarah does such a great job.

    I, too, have been annoyed by not being able to find the printer icon and then discovered that in order for the printer icon to appear, it is necessary to scroll down the page slightly until only the top part of the recipe is in view at the top (on my Mac); then another menu-type bar appears and the printer icon is in the upper right hand corner. I really miss the nutrition facts that used to be on the email page with Sarah's Everyday Food Recipe. I don't understand why that was discontinued.

    I agree with the other reviewers about the printer. It may be dependent on the browser you are using, but I can never find a printer icon - even now when you said where it was. Please fix this. It is very frustrating.

    It is easy to print. There is a printer icon in the upper right corner of your screen. I reduced the format to 85% so it would fit on one page. Hopefully this helps!

    I agree with Teddylowe, if we are not going to be able to easily print the recipe, as other food sites do, I am going to drop this site even though this recipe looks good and I have gotten good recipes from here in the past.

    Recipe looks excellent. The problem I have is that since your format has changed I can do longer printed recipes. Such a loss for a great website! Please fix or tell me how to print ONLY the recipe????? Many thanks!
