Grilled Chicken and Herbs Salad

Throw a couple of pieces of chicken and crusty bread on the grill for a few minutes and dinner's practically ready.

  • Boneless, skinless chicken breasts
  • Bread slices
  • Romaine or other greens
  • Sliced English cucumber
  • Tomato wedges
  • Fresh cilantro leaves
  • Extra-virgin olive oil
  • Lemon juice
  • Soft, leafy herbs


  1. Grill chicken and bread slices. Cut chicken into pieces. Toss with greens, cucumber, tomato, and cilantro. Dress with olive oil, lemon juice, and herbs; serve with bread.
