  • 2 slices bacon, cut into 1-inch pieces
  • 2 bunches asparagus (2 pounds), trimmed and cut into 1-inch pieces
  • Coarse salt and ground pepper
  • 2 teaspoons Dijon mustard
  • 3 tablespoons chopped fresh parsley

  1. In a large skillet, cook bacon over medium, stirring occasionally, until browned and crisp, 8 to 10 minutes. With a slotted spoon, transfer to paper towels to drain. Add asparagus to skillet and season with salt and pepper. Cook, stirring, until asparagus is tender, about 10 minutes. Remove from heat and stir in bacon, mustard, and parsley.

Easy to make, moorish to eat. I used 1.5 tsp Dijon and 0.5 tsp whole grain mustard. Added a few slices mushrooms and a small squeeze of lemon juice. My husband wants me to make it again so a win in this house :)

Very easy and fast. I had a shallot so added that when I sauteed the bacon. Instead of regular pepper, I used a lemon pepper. Topped the dish with a couple of fried eggs and it made for a deluxe breakfast.

This recipe was really easy and very delicious. The bacon and dijon mustard complement the asparagus perfectly!
