Use this raspberry coulis as a filling in chef Michel Roux's Roulade Marquis.
- 4 cups raspberries
- 1/3 cup Stock Syrup
- Juice of 1/2 lemon
Place all ingredients in the jar of a blender; blend until smooth. Strain through a cheesecloth-lined or fine strainer.
