Raspberry Coulis

Use this raspberry coulis as a filling in chef Michel Roux's Roulade Marquis.

  • 4 cups raspberries
  • 1/3 cup Stock Syrup
  • Juice of 1/2 lemon


  1. Place all ingredients in the jar of a blender; blend until smooth. Strain through a cheesecloth-lined or fine strainer.
