The keys to this martini are dry gin and dry vermouth, as opposed to sweet gin and sweet vermouth. Derek Brown, bartender and owner of the Columbia Room in Washington, D.C., shares his version.

- 1 1/2 ounces very cold gin
- 1 1/2 ounces dry vermouth, chilled
- Dash of orange bitters
- 1 (2-inch) lemon peel
Fill a mixing glass with ice. Add gin, vermouth, and bitters; stir until well chilled. Strain into a chilled cocktail glass. Twist lemon peel over liquid and discard; serve.
