Classic Mayonnaise


  • 1 egg
  • 1 teaspoon prepared Dijon mustard
  • Pinch salt
  • 1/4 teaspoon sugar
  • 1 cup vegetable or safflower oil
  • 1 tablespoon fresh lemon juice
  • Pinch ground black pepper


  1. Step 1

    In a blender, mix egg, mustard, salt, and sugar. Slowly drizzle in oil while blender is running. Add lemon juice. Season with black pepper. Refrigerate in a jar.
