Elegant Thanksgiving Menu Preparation Schedule

Everyday Food, November 2009

This schedule is based on the Elegant Thanksgiving menu.

2 Weeks Ahead

Order turkey (if using fresh).

1 Week Ahead

Dry bread for stuffing.

3 to 4 Days Ahead

Make cranberry sauce. If using a frozen turkey, place in the refrigerator to thaw.

2 Days Ahead

Fry shallots and make mushroom sauce for green bean casserole. Trim and peel pearl onions. Make pie crust.

1 Day Ahead

Make giblet stock and glazed pearl onions. Blanch green beans and prep sweet potatoes. Set the table; pick out platters, bowls, and serving utensils. Chill wines.

Morning Of

Finish pie and make stuffing. Bring turkey to room temperature.

4 Hours Before

Stuff turkey and start roasting. After 1 hour, place sweet potatoes in oven. Bring cranberry sauce to room temperature.

1 Hour Before

Assemble green bean casserole. While turkey rests, bake casserole, make gravy, cook brussels sprouts, and reheat glazed onions.
