Frozen Pancakes and French Toast

Don't let leftovers go to waste: When you freeze homemade pancakes or French toast from your weekend batch, you can have a homemade breakfast any day of the week. Arrange in a single layer on a baking sheet to freeze, and then transfer to resealable freezer bags for up to two months. To serve, just pop them into the toaster and then onto the plate.

    Love to do this with waffles and if you use 'sour milk' (I freeze old milk in 1 cup increments for pancakes & waffles) and BEATEN egg whites to stiff peaks and fold into batter, the waffles are fluffier. It is also good to cool on racks and put wax, parchment or butcher paper pieces between the pieces. Great for Martha to suggest this!

    Why just two months?!? I thought the freezer kept stuff for up to a year or more. marthastewart.com is SO conservative when it comes to that stuff -- even cookies are only good for three days if you follow these recipes? Our ancestors would snort at us ;)
