Scallion Vinaigrette

Scallion Vinaigrette


  • 1/4 cup white-wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Pinch of sugar
  • 3/4 cup extra-virgin olive oil
  • 3 chopped whole scallions (about 1/4 cup)


  1. In a small bowl, whisk together white-wine vinegar, Dijon mustard, salt, pepper, sugar, and scallions.

  2. Slowly add extra-virgin olive oil, whisking until emulsified. Or shake the ingredients in a jar, or whirl them in a blender.

    Great recipe--been using it since it appeared in Everyday Food in 2003. I like my vinaigrettes with some bite. I advise reducing the oil by 1/4 cup. I throw everything in my blender & process.

    I cut down the amount of oil a tad and really saved on calories. A big hit in my home.
