Padron Peppers Scattered on Lavash with Cheese

- 2 tablespoons extra-virgin olive oil, plus more for drizzling
- 12 sliced Padron peppers (3 ounces)
- Coarse salt
- Soft goat cheese
- 1 toasted lavash or other flatbread
Heat 2 tablespoons extra-virgin olive oil in a skillet over medium heat. Saute peppers until softened, 3 to 4 minutes. Season with salt. Spread goat cheese over lavash or flatbread. Scatter peppers over top, and drizzle with more olive oil. Cut into pieces.
