Hill Country Rub

Use this simple spice mixture from Hill Country Barbecue chef Elizabeth Karmel on her Beer-Can Chicken or any barbecue recipe.

  • Yield: Makes about 1 1/2 cups


  • 1 1/2 cups coarse salt
  • 1/4 cup black peppercorns, preferably tellicherry, coarsely ground
  • 1 tablespoon cayenne pepper


  1. In a medium bowl, mix together all ingredients until well combined. Store in an airtight container at room temperature for up to 6 months.
