Adobo Criollo

Use this blend of spicy seasonings in Roberto Guerra's Cuban-Style Roast Pig recipe.

  • Yield: Makes about 2 cups

Ingredients

  • 1/2 cup coarse salt
  • 1/2 cup garlic powder
  • 1/4 cup onion powder
  • 1/4 cup ground oregano
  • 4 teaspoons ground bay leaves
  • 1 tablespoon ground cumin
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Mix together all ingredients in an airtight container; cover and let stand at least 12 hours before using.
