Chicken Koftas with Cucumbers and Yogurt

  • 1 1/4 pounds ground chicken
  • 1/2 white onion, diced small
  • 1/3 cup chopped fresh parsley leaves
  • Coarse salt and ground pepper
  • 1/2 cucumber, diced large (1 1/3 cups)
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons vegetable oil
  • 2 medium tomatoes, cut into 1/4-inch slices
  • 4 pitas
  • 1/2 cup fresh mint leaves, for serving


  1. In a large bowl, combine chicken, onion, and parsley; season with salt and pepper. Using your hands, mix until well combined. Form mixture into 8 oval patties.

  2. In a medium bowl, toss together cucumber and yogurt; season with salt and pepper. In a large skillet, heat oil over medium-high. Cook patties until browned on all sides and cooked through, 12 minutes. Divide patties and tomatoes among pitas. Top with cucumber-yogurt sauce and mint. Fold to enclose and serve.

Cook's Notes

For extra flavor, add 1/2 teaspoon cumin or red-pepper flakes to the ground chicken.

    As a half-Arab, I'm severely disappointed with this bland recipe. This dish does not resemble anything Middle Eastern. Middle Eastern food uses spices such as cumin, coriander powder, chopped cilantro, lemon juice, chilies...etc. And yogurt sauce is more than just plain yogurt and cucumber, it includes minced garlic, a bit of lemon juice, chopped cilantro and mint. BLAH!

    I LOVE this recipe! I'm making it again tonight. I don't think it was too bland, and usually I love a lot of flavor. I thought it was delightful.

    If you want a tasty alternative recipe, try Martha's Tandoori Chicken Burgers. They are delicious!

    Quite bland. Needs some chopped garlic & herbs such as cilantro etc. Also would use chopped red onion & perhaps a bit of cayenne & lemon.

    I wasn't a huge fan of this recipe. It was really bland -- not much flavor in the chicken or yogurt sauce, even after I added garlic, white vinegar, olive oil and dill to it. It was also so messy to eat! Nearly impossible. It wasn't horrible, we just like our food with more poignant flavors.
