Strawberry Daiquiri Italian Ices

These fruity iced treats will transport you to a warm, sunny beach (cocktail umbrellas optional).

Strawberry Daiquiri Italian Ices

  • 1 pound strawberries (4 cups), rinsed and hulled
  • 2/3 cup light rum
  • 1/2 cup water
  • 1/4 cup sugar
  • 1/4 cup fresh lime juice (from 2 limes)
  • Pinch of coarse salt
  • Garnish: strawberries


  1. Puree strawberries, rum, water, sugar, lime juice, and salt in a blender until smooth. Divide among 14 3-ounce paper cups ( Freeze on a rimmed baking sheet for at least 5 hours. Garnish with strawberries.

Cook's Note

Ices can be frozen, covered with plastic wrap, for up to 2 weeks.

    These were a HUGE hit! I used fresh berries and a banana good! I let them sit out for about 5 minutes at room temp and then used a fork to "slush" them up a bit prior to serving.

    I was very surprised to be as disappointed as i was with this recipe. From the few ingredients that go into it, it looks like it could be delicious. The taste of this is in no way, on any level appealing. I love Strawberry Daiquiris, but this recipes tastes very much like chemical-y plastic. All of my guests agreed. I used fresh berries and Bacardi Rum. It just is not a very good recipe at all.
