Grease waffle iron with a small amount of melted butter, and heat. In a large bowl, sift together the flour, sugar, baking soda, baking powder, cinnamon, and salt.
In a separate bowl, whisk together egg yolks, buttermilk, melted butter, and vanilla. Pour into dry mixture, and combine.
In a medium bowl, beat egg whites until stiff but not dry. Fold whites into batter.
Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid, and bake 3 to 5 minutes, until no steam emerges from waffle iron.
Transfer cooked waffles to a baking sheet; place in an oven set to low heat, about 200 degrees, while using remaining batter.
On the TV show, Martha used 1 vanilla bean, split and scraped, instead of vanilla extract and baked waffles 5 to 7 minutes.
These are easily the BEST waffles I've ever made or eaten. YUM! Everyone devoured them. This will become our waffle recipe for Sundays!
I've been making these since the magazine came out. Absolutely the best waffle recipe! I often use 1/2 nutriflour to make them a little healthier and the family doesn't even notice.
These are the BEST waffles!!! They even freeze well and I reheat them in the toaster. There is one glitch though, the melted butter always hardens and lumps up when added to the milk. So I slowly warm the milk and butter in a saucepan over very low heat until combined, being careful not to heat too much as I don't want to scramble the eggs!! I'm sure if my buttermilk was room temp this wouldn't happen, but this is an easy fix. I've folded in fresh blueberries as a last step with yummy results!

This recipe is amazing! Delicious waffles! And so easy to make!!! I topped them off with whipped cream flavoured with Martha Stewart's homemade pumpkin pie spice mix from the November Living issue. Perfection!
I have been using this Martha Stewart recipe for several years. They are the best waffles ever! My husband and I have been dieting, but he wants a really good cheat this morning so he asked for waffles. I couldn't find the recipe on my computer, but here it is again. For the person not finding buttermilk, you can take 1 cup of regular milk and add in 1 tbsp of white vinegar. Google it and you will find the exact way to do it. I will be making them that way this morning too.
Can I substitute buttermilk with regular milk? I can't seem to find buttermilk where I live.
