Scarlet flames -- tuile cookies tinted red -- eerily evoke the underworld when they dance around a dense devil's food cake.
- 1 large egg white
- 1/4 cup superfine sugar
- 1/2 cup all-purpose flour, sifted
- Pinch of coarse salt
- 4 teaspoons unsalted butter, melted
- 2 teaspoons heavy cream
- 1/4 teaspoon pure vanilla extract
- Red and orange gel-paste food coloring
Preheat oven to 350 degrees. Line a large baking sheet with a nonstick baking mat, such as Silpat. Beat egg white and sugar in a mixer on medium speed until combined. Reduce speed to low. Add flour and salt, and beat to combine. Beat in butter, cream, vanilla, and a few drops each red and orange food coloring.
Using a small offset spatula, spread 1 teaspoon batter into an oblong shape, about 5 inches by 2 inches, on prepared baking sheet. Repeat, spacing the ovals 1 inch apart. Bake until just set at edges, about 6 minutes. To create flame shapes, remove tuiles from baking sheet with an offset spatula, and set them on a clean work surface. They will naturally dry into wavy shapes within a minute or two. Carefully shape flames by breaking off edges and leaving them jagged.
Repeat process with remaining batter.
