Chimichurri Sauce

Pair this classic chimichurri sauce, adapted from "Martha Stewart's Dinner at Home," with Pan-Seared Steaks.

Chimichurri Sauce

Ingredients

  • 1/4 cup minced red onion (about 1/2 onion)
  • 2 tablespoons plus 2 teaspoons coarsely chopped fresh flat-leaf parsley
  • 2 tablespoons plus 2 teaspoons extra-virgin olive oil
  • 1 tablespoon plus 1 1/2 teaspoons red-wine vinegar
  • 1 1/2 teaspoons coarsely chopped fresh oregano
  • 1 1/2 teaspoons minced garlic
  • 1 1/2 teaspoons finely grated lemon zest
  • 1 1/4 teaspoon coarse salt
  • 1/4 teaspoon crushed red-pepper flakes
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Mix all ingredients together in a medium bowl; let stand at room temperature for 15 minutes before using.
