  • 1 (2-inch) piece ginger, peeled
  • 1 small red onion, coarsely chopped
  • 1 large red mild dried chile, such as New Mexico
  • 2 cloves garlic
  • Juice of 1 lime
  • 3 tablespoons white vinegar
  • 2 teaspoons madras curry powder
  • 1 teaspoon fine sea salt


  1. Place all ingredients in the jar of a blender; add 1/4 cup water. Blend until coarsely ground.
