Lee Hanson and Riad Nasr's Clarified Butter

This recipe from chefs Lee Hanson and Riad Nasr is used to make their Sliders and Roast Chicken for Two.

  • yield: Makes 1/2 cup

Ingredients

  • 12 tablespoons (1 1/2 sticks) unsalted butter

Directions

  1. Step 1

    Place butter in a small saucepan and melt over low heat. Remove from heat and allow milk solids to sink to bottom. Skim any foam from surface, then carefully pour off clarified butter, leaving solids behind.
