PB and J Pancakes

Leftover pancakes can be frozen and used to make these tasty on-the-go breakfast sandwiches.

  • Yield: Makes 4 sandwiches

  1. Spread crunchy peanut butter on 4 pancakes. Spread jam on 4 other pancakes. Top peanut butter pancakes with jam pancakes to make a sandwich. Wrap each sandwich in foil for a breakfast on the go!

    I decided to give this recipe a try, but used what I had on hand; which was whipped peanut butter and fresh raspberries. The combination was excellent, in addition to the fact that fresh fruit offers a healthier alternative to jam.
    The pancake recipe itself was ok - my hands down fav is Martha's Buttermilk Pancakes, they are UNMATCHED!
