    Quick and easy pesto, pulsed in the food processor, makes good use of the abundance of spicy basil during summer. It takes just a few minutes to make a sauce for topping pastas, sandwiches, or vegetables.

    Ingredients

    • 3 cups packed fresh basil, torn into pieces
    • 1/4 cup pine nuts
    • 2 garlic cloves
    • Coarse salt
    • 1/2 cup extra-virgin olive oil
    • 1/4 cup finely grated Parmesan cheese
    • Freshly ground pepper

    Directions

    1. Puree basil, nuts, garlic, and 1/2 teaspoon salt in a food processor. With machine running, slowly add oil, and process until smooth. Stir in cheese. Season with salt and pepper.

      This pesto was so easy to make and very versatile which I love! You can top meat or chicken with it. Serve it with pasta. I added it to store bought marinara to go over pasta. I'm going to make this more often and come up with new ways to serve it!
